Romantic Home-Cooked Dinner: Pan-Seared Ribeye with Fig-Chili Red Wine Reduction

🛒 Your Cordelia’s Shopping List

  • The Main: 2 Certified Angus Beef Ribeye or New York Strip steaks

    • Ribeye: 16 to 24 ounces (1 to 1.5 lbs) per steak.

    • New York strip 14 to 18 ounces (0.8 to 1.1 lbs) per steak.

  • The Produce: 1 lb fresh Brussels sprouts, 1 bulb of garlic, and fresh rosemary.

  • The Pantry: 1 jar of Fig Chili Spread, balsamic vinegar, and a bottle of dry red wine (Cabernet or Merlot works best).

🍳 Preparation Instructions

1. Roasted Garlic Brussels

  • Preheat your oven to 400°F.

  • Halve the Brussels sprouts and toss them on a baking sheet with olive oil, salt, and 3 cloves of smashed garlic.

  • Roast for 20 minutes until the edges are charred and crispy.

2. The "Perfect Sear" Steaks

  • Take your steaks out of the fridge 30 minutes before cooking to reach room temperature. Pat them dry and season generously with salt and cracked black pepper.

  • Heat a cast-iron skillet over high heat with a splash of oil.

  • Sear for 3–4 minutes per side for medium-rare. In the last minute, toss in a tablespoon of butter and a sprig of fresh rosemary, spooning the melted butter over the meat as it finishes.

  • The Golden Rule: Transfer steaks to a plate and let them rest for at least 8 minutes.

3. Fig-Chili & Red Wine Reduction

While the steaks rest, use the same skillet (keep those flavorful juices!):

  • Turn the heat to medium and pour in 1/2 cup of red wine and 1 tablespoon of balsamic vinegar. Scrape the bottom of the pan to loosen the flavor.

  • Whisk in 2 tablespoons of Fig Chili Spread.

  • Simmer until the liquid reduces by half and becomes a thick, glossy syrup. The fig adds an earthy sweetness while the chili provides a subtle, sophisticated warmth. Pour it over your rested steaks just before serving.
