🍳 Preparation Instructions
1. Roasted Garlic Brussels
Preheat your oven to 400°F.
Halve the Brussels sprouts and toss them on a baking sheet with olive oil, salt, and 3 cloves of smashed garlic.
Roast for 20 minutes until the edges are charred and crispy.
2. The "Perfect Sear" Steaks
Take your steaks out of the fridge 30 minutes before cooking to reach room temperature. Pat them dry and season generously with salt and cracked black pepper.
Heat a cast-iron skillet over high heat with a splash of oil.
Sear for 3–4 minutes per side for medium-rare. In the last minute, toss in a tablespoon of butter and a sprig of fresh rosemary, spooning the melted butter over the meat as it finishes.
The Golden Rule: Transfer steaks to a plate and let them rest for at least 8 minutes.
3. Fig-Chili & Red Wine Reduction
While the steaks rest, use the same skillet (keep those flavorful juices!):
Turn the heat to medium and pour in 1/2 cup of red wine and 1 tablespoon of balsamic vinegar. Scrape the bottom of the pan to loosen the flavor.
Whisk in 2 tablespoons of Fig Chili Spread.
Simmer until the liquid reduces by half and becomes a thick, glossy syrup. The fig adds an earthy sweetness while the chili provides a subtle, sophisticated warmth. Pour it over your rested steaks just before serving.
